The Tomatoes Are Ready

It’s that time of year – the tomatoes are red, ripe, juicy and plentiful.  This year I am experimenting with some new recipes to use all the fresh and flavorful beauties!

This is my rendition of bruschetta.  Simply delicisio!!  We were having people over so I made a big batch.

About 20 Roma tomatoes, diced

1 medium purple onion, finely diced

2 cloves garlic, finely diced

Fresh basil leaves, chopped

Splash of olive oil

Splash of balsamic vinegar

1/2 cup Parmesan cheese

Baguette slices, toasted
