Christmas Dessert – Red Velvet Trifle

I was searching for something festive (RED) for my Christmas buffet.  This is a pretty easy dessert that must be made ahead of time, leaving even more time to spend with the family on Christmas morning.

Red Velvet Trifle

12 Red Velvet cupcakes – I used a box mix

1 cup seedless raspberry jam

1/4 cup black raspberry liqueur – I used Chambord

1/4 cup fresh orange juice

2-8 ounce containers mascarpone cheese

2 cups heavy cream

1/3 cup sugar

1 tsp vanilla

3-6 ounce containers raspberries

1.  Whisk together raspberry jam, orange juice and Chambord in a small bowl.

2.  Stir together mascarpone cheese in a large bowl.

3. Beat heavy cream at high speed with an electric mixer until foamy then gradually add sugar and vanilla, beating until soft peaks form.  Stir 1/4 of whipped cream into mascarpone using a rubber spatula.  Stir in remaining whipped cream.

4.  Cut 4 cupcakes in to 4 pieces and lay in bottom of trifle bowl.  Drizzle with 1/3 of jam mixture.  Top with 1 container raspberries.  Dollop 1/3 whipped cream mixture.  Repeat layers twice more.  Cover and chill overnight.

I felt like it needed a little something on top so as a garnish so I added sliced strawberries right before serving.  I would have used raspberries but I didn’t have any left.


Everyone really enjoyed this.  It was a huge hit.
